Amber Lyn has been providing delicious gluten free chocolate confections for nearly 10 years. Many of our loyal customers are gluten intolerant and are able to use both sugar free dark chocolate and no sugar added milk chocolate safely.
Although the sweetener we use is derived from wheat, extraction of the sweetener is accomplished by washing out the starch leaving it gluten free.
Gluten is a protein found in wheat, rye and barley. Gluten intolerance, also called celiac disease, is an extreme sensitivity to the protein gluten. Gluten intolerance is not a food allergy but an autoimmune disease. The body's immune system mistakenly identifies gluten as an attacker protein leading to inflammation and damage in the small intestine as it seeks to destroy the invader. Damage to the small intestine can occur when a person with gluten intolerance consumes even a small amount of gluten. Typical symptoms include abdominal pain and diarrhea.
The treatment for gluten intolerance is to remove all gluten from the diet.
Most Amber Lyn Chocolate products are gluten free. We’re often asked how the sweetener we use, maltitol, which is derived from wheat, can be gluten free. The gluten is washed out with the starch in processing. A food product is considered gluten free if it has less than 10 ppm (part per million).
