The quest for a healthy but great tasting chocolate led to the birth of Amber Lyn Chocolates in 1999. It all started with a retired cop.

Lyman Peterson was a Utah highway patrolman who spent a career busting DUI's, admonishing speeders and helping damsels in distress change flat tires. But chocolate was his real passion. After patrolling the highways and byways of the Wild West for 30 years and putting on as many pounds, he retired and searched for low-carb chocolate that tasted like real chocolate. Most of what he found was awful and he couldn't find anything to satisfy his craving for good tasting, high quality chocolate.

The ensuing search led to Belgium where he found the object of his quest. It was pure chocolate with no fillers or preservatives. It was rich, smooth and high in healthy antioxidants and polyphenols. And, it was sugar free but didn't taste that way. It was also lower in calories, lower in carbohydrates and contained no gluten. Using a second-hand melter in his basement he began pouring and hand-wrapping chocolate bars. When demand reached 10,000 bars a week it was time to take the next step

The company moved out of the basement and acquired several commercial melters and a high-speed wrapper. Named after Peterson's only daughter, Amber Lyn Chocolate has established itself as the preferred source of sugar-free and no sugar added chocolate for thousands of devoted chocolate lovers from across the country and even overseas.

These days, Lyman is often back on the road. This time around he cruises the roadways between St. George and the rest of the USA delivering product, preaching the benefits of his chocolate and overseeing road shows at various retail locations.
